Chef Alberico Penati Presents New Summer Menu

Michelin-Starred Chef Alberico Penati presents a reinvigorated menu this early summer. Penati al Baretto is serving up six new dishes that reflect the full diversity and vibrancy of Italian cuisine. Enjoy one; enjoy many as you like.

Summer Regional Delicacies

Chef Alberico Penati uses a careful selection of seasonal produce to create six delicate new dishes for summer… all of which sit perfectly alongside a host of his classic creations.

Savour the flavoursome dish of Risotto Vialone Nano, the creamy rice served prettily on the plate, with rosemary and crumbles of goat cheese. Or try the Spaghetti Verrigini, layered with garlic and small piles of cauliflower that has been roasted to become a crisped cacophony of flavour. Of the traditional Italian mains, opt for the calf’s head, roasted and served with spicy peppers and capers, to create the authentic aromas of the rural Italian campagna.

Among the salads is a plate of artichokes paired with speck. This distinctly flavoured smoked, cured ham represents the character of Chef Penati’s cuisine – a gastronomic combination of Mediterranean traditions. A plate of eggplant is the perfect base for fresh, creamy mozzarella. Diced summer tomatoes add vibrancy and texture, and the vinaigrette ties everything together.

Penati al Baretto also serves an impeccable selection of drinks. From the finest vintage and exciting sparkling wines, this collection represents the best of Italy… and ensures you have a true taste of the old country with every visit. 

The Italian Master Behind the Menu

The restaurant, Penati al Baretto – within the Hotel de Vigny – is now part of Italian culinary history, and Alberico Penati himself is a legend.

Penati’s story starts at the age of 14, when he started an apprenticeship in a Venetian family-run restaurant in Lecco. He followed with placements at the Villa de’Este in Lake Como, the Grand Hotel Rimini and the iconic Excelsior in Venice. Working his way across Europe, the chef helped establish and broaden the reputations of Paris’ Michelin starred Le Carpaccio at the Royal Monceau, Harry’s Bar at Annabel’s and Aspinalls Casino, both in London…before opening 5 Hertford Street in Mayfair, a favourite with the Royal family. 

After opening Penati al Baretto in 2014, the restaurant was rewarded with its first Michelin star shortly after. Here, in his flagship restaurant, Penati recreates the exciting flavours of Italy’s past using the produce of today.

By curating a menu of rare and prestigious dishes, all of which have been painfully perfected, you will be able to indulge in contemporary Italian cuisine that puts a new twist on the textures and flavours of Italy’s rich food heritage… and this summer, Penati looks set to dazzle Paris once again with his creative seasonal offerings.
